Mmmmmm....I LOVE KFCs Coleslaw! I mean LOVE it! It is the perfect creaminess, sweetness, crispness! Growing up I LOVED when we had KFC, my meal consisted of potatoes and gravy, a chicken leg, biscuit with honey and a boat load of slaw. To this day, it is my go to comfort meal.
But, after looking up the nutrition info, I kind of fell out of love a little bit. Goodness is it loaded! I decided right then I was going to try to lighten it up a bit. The results? Totally worth it and awesome!

*For my "Buttermilk" I used the fake buttermilk. Place a Tbs of vinegar in measuring cup then pour however much milk you need to get desired amount of "buttermilk". I used skim milk I had on hand and it worked perfectly. This helps cut down on so much fat, plus it is rare that I have actual buttermilk on hand.
