Grilled BBQ Chicken Pizza

 
School has been out for 2 weeks here. You would think that would mean things have started to slow down. Right? Wrong! I think the opposite has happened actually. This week alone we will be driving out of town not once, not twice, but 4 times for dance! FOUR TIMES! For DANCE! Oh my gosh! That is on top of our regular busy schedule. Recital is this weekend so we are prepping for that.

Next week the girls will start summer dance, that is in town though so I won't feel as rushed. I hope.

Since I have days that we are constantly running, I need an arsenal of quick meals. One of my FAVORITE quick meals is grilled pizza! It seriously takes just minutes to fix. The girls only eat cheese and Hubby will sometimes eat the same type of pizza I fix for myself....unless it has pineapples. He won't touch it if it has pineapples. This week I decided to try a Grilled BBQ Chicken Pizza. Oh my gosh! It was delicious! Even Mads liked it! WooHoo!
I used Tyson Grilled & Ready Oven Roasted Diced Chicken on the pizza. I love this chicken because it is quick to heat up and makes the perfect addition to salads, soup, pizza and more! I also made homemade BBQ sauce! I have made homemade BBQ sauce once before and did NOT like it. This time, I used Kristy from Mommy Hates Cooking version. I love that I can control the ingredients and change things up if I want. Plus, it took less than 10 minutes to whip up, this included measuring out ingredients! I used our favorite ketchup, Hunt's, and used Sriracha instead of Tobasco. The flavor is really good and because of the Sriracha, has a bit of a kick to it.

Grilled BBQ Chicken Pizza
Ingredients
1 FlatOut Flatbread
3-5 pieces Tyson Grilled & Ready Oven Roasted Diced Chicken
2 Tbs BBQ Sauce
Sliced Onion
Mozzarella Cheese

Directions
Preheat grill, if using a gas grill use low heat.
Preheat chicken according to bag directions.
Grill Flatbread for 1-2 minutes then remove from grill.
Place BBQ Sauce on the grilled side of the flatbread, continue to top with Chicken, onions and cheese to your liking.
Carefully return to grill and grill for 5 minutes, or until cheese has melted and crust is crisp.
Remove from grill and enjoy!

I don't know about you but, we go through oatmeal like that is the only thing to eat on this planet!   Seriously a TON! My youngest would eat it for every meal and snack....every day....if I let her. Hey guys!  I have some EXCITING news!  Today I am posting over at Mom It Forward ! The Fiesta Chicken Taco mix is GREAT on nachos as well!  I also made a quesadilla with some of the mix last night and it was AMAZING!  This is also a very frugal meal, the total cost for me was $2.67! Here is the breakdown: Leftover Chicken - Free Black Beans - $0.50 for 1 can Frozen Corn - $0.17 (it was on sale and I used coupons, it was $0.33/bag and I used half a bag) Tomatoes and Green Chilies - FREE (again, on sale and I had a coupon) Tortillas - $2 Total- $2.67!  Now, if you had to buy all of that at regular price it still equals out to a very frugal meal.
